Summer is the perfect time to get out and enjoy the outdoors. A great way to do so is to enjoy a little gardening. Typically when you live in a rental apartment, you don’t have outdoor space to test out your green thumb. This means you’re limited to indoor plants and maybe a few outdoor planters on the patio. At East Bay Apartment Homes, we don’t think you should have to give up gardening just because you’re renting. That’s why we have the East Bay Community Garden!
This resident favorite amenity gives you the opportunity to have fresh veggies, herbs and spices just steps from your door. This summer we will be seeing things like tomatoes, okra, lettuce and a variety of herbs and spices.
Wondering what to do with the crops growing in the community garden? As they grow, the product can be harvested and used in your own kitchen or shared with neighbors. Want to get together with your fellow community members and have a potluck? Utilize our covered pavilion with a grill and picnic areas to have a neighborhood potluck. Here are a few great ways to use the veggies that are coming up.
Tomatoes are sweet and juicy that have become a staple to the kitchen. Here are a few ways to use them in your own cooking. Tomatoes are perfect for slicing and adding to burgers and sandwiches. Add some diced tomatoes to a green salad or pasta salad. Make some Caprese appetizers or even a Margherita pizza. Tomatoes are also delicious on a shish kabob with things like steak, mushrooms, pineapple and peppers.
Okra is both a southern staple that can be cooked in a multitude of ways and a good source of minerals, vitamins, antioxidants and fiber. Try dipping your okra in egg and cornmeal and frying until golden brown for a nice crispy side dish, or add some okra to your next pot of gumbo. Okra is also delicious pickled and even oven-roasted.
Lettuce is light and crisp that can be used in tons of different delicious and refreshing summer dishes. Add lettuce to burgers, sandwiches, burritos and wraps with all your favorite toppings. Try making lettuce wraps or fresh rolls with your lettuce, or simply mix up a big green salad complete with a tasty dressing.
Herbs and Spices will vary in the garden, but you’re sure to find something to add to your cooking. No dish is complete without a little flavor and homegrown is the best way to get it. Add fresh herbs and spices to everything from pasta to soup and stir fry this summer.
